  • 700 g sweet potatoes
  • 800 g tinned green lentils
  • 6 tbsp BBQ sauce
  • 2 red onion
  • 2 tsp smoked paprika
  • 1 tsp garlic granules
  • 2 tbsp olive oil
  • 200 g baby corn
  • 15 g fresh chives

Method

    Preheat the oven to 200°C (fan 180°C). Cube the sweet potatoes and cut the red onions into wedges.

    Toss the sweet potato, onion, and baby corn with olive oil, smoked paprika, and garlic granules. Spread over a large roasting tray and roast for 25 minutes.

    Drain the lentils and stir through 4 tablespoons of BBQ sauce. Add to the tray, tossing everything together.

    Return to the oven for a further 15 minutes until the sweet potato is tender and the lentils are sticky.

    Drizzle over the remaining BBQ sauce, scatter with snipped chives, and serve straight from the tray.
