Smoked Mackerel & New Potato Niçoise

Ingredients

  • 4 smoked mackerel fillets
  • 500 g new potatoes
  • 200 g green beans
  • 4 eggs
  • 200 g cherry tomatoes
  • 1 tsp Dijon mustard
  • 2 tbsp red wine vinegar
  • 4 tbsp olive oil

Method

    Boil the new potatoes in salted water for 15 minutes until tender, adding the green beans for the final 3 minutes. Drain and cool slightly.

    Soft-boil the eggs for 7 minutes, then plunge into cold water, peel, and halve.

    Whisk together the Dijon mustard, red wine vinegar, and olive oil to make a dressing. Season well.

    Arrange the potatoes, green beans, cherry tomatoes, and eggs on a large platter.

    Flake the smoked mackerel over the top, discarding any skin.

    Drizzle generously with the dressing and serve at room temperature.
