  • 400 g smoked mackerel fillets, skin removed
  • 800 g tinned butter beans
  • 400 g tinned chopped tomatoes
  • 100 g spinach
  • 1 lemon
  • 3 garlic cloves
  • 3 tbsp olive oil
  • 1 tsp sweet paprika

Method

    Heat the olive oil in a large pan over a medium heat. Crush the garlic and fry with the paprika for 1 minute.

    Add the chopped tomatoes and drained butter beans. Season well and simmer for 10 minutes.

    Stir in the spinach and cook for 2 minutes until wilted.

    Flake in the smoked mackerel in large pieces, gently fold through without breaking it up too much, and heat for 2 minutes.

    Squeeze over the lemon juice, taste for seasoning, and serve with crusty bread or warm pitta.
