Singapore-Style Vermicelli Noodles with Prawns

Ingredients

  • 200 g dried rice vermicelli noodles
  • 250 g raw king prawns
  • 2 tsp medium curry powder
  • 2 eggs
  • 150 g beansprouts
  • 1 red pepper
  • 2 tbsp soy sauce
  • 3 tbsp vegetable oil
  • 4 spring onions

Method

    Soak the vermicelli in boiling water for 4 minutes until just tender, then drain and rinse under cold water.

    Heat 1 tbsp oil in a wok, beat and add the eggs to make a thin omelette, then slide out and slice into strips.

    Add the remaining oil to the wok, stir-fry the sliced pepper for 2 minutes, then add the prawns until pink.

    Sprinkle in the curry powder and stir-fry for 30 seconds until fragrant.

    Add the drained noodles, beansprouts and soy sauce, tossing constantly for 2 minutes.

    Fold in the omelette strips and sliced spring onions, then serve immediately.
