Sesame-Crusted Tuna with Edamame & Soba Noodle Salad

Ingredients

  • 4 tuna steaks
  • 50 g sesame seeds
  • 200 g soba noodles
  • 200 g frozen edamame beans
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 15 g fresh ginger

Method

    Cook the soba noodles according to packet instructions, drain, and rinse under cold water. Cook the edamame per packet instructions.

    Whisk together the soy sauce, sesame oil, rice wine vinegar, and grated ginger to make a dressing.

    Toss the soba noodles and edamame with most of the dressing.

    Press the tuna steaks firmly into the sesame seeds to coat both sides.

    Heat a non-stick frying pan over high heat with a little oil. Sear the tuna for 1 minute per side so the outside is golden but the centre remains pink.

    Slice the tuna and serve over the noodle salad with the remaining dressing drizzled over.
