Seared Tuna Niçoise with Green Beans and Soft-Boiled Eggs
Ingredients
- 500 g fresh tuna steaks
- 200 g fine green beans
- 4 eggs
- 200 g cherry tomatoes
- 80 g black olives
- 1 tsp Dijon mustard
- 2 tbsp red wine vinegar
- 4 tbsp olive oil
Method

Bring a pan of salted water to the boil. Cook eggs for 7 minutes, then transfer to cold water, peel and halve.

Blanch green beans in the same boiling water for 3 minutes, drain and refresh under cold water.

Whisk together Dijon mustard, red wine vinegar and 3 tbsp olive oil to make the dressing. Season well.

Brush tuna steaks with remaining olive oil and season. Sear in a hot griddle pan for 90 seconds each side so they remain pink in the centre.

Arrange green beans, halved cherry tomatoes and olives on a large platter. Nestle in the egg halves.

Slice tuna and lay on top. Drizzle dressing over everything and serve straight away.
