  • 80 g cheddar cheese
  • 1 tbsp balsamic vinegar
  • 5 g fresh thyme
  • 1 tbsp vegetable oil
  • 1 tsp wholegrain mustard

Method

    Preheat the oven to 180°C/160°C fan. Slice the onions thinly. Heat oil in a large ovenproof frying pan and cook the onions over low heat for 15 minutes until golden and caramelised.

    Slice the sausages into rounds and add to the pan. Fry for 4–5 minutes until browned. Add the balsamic vinegar and thyme, stir, and cook for 1 minute.

    Stir the wholegrain mustard through the mixture and spread evenly across the pan.

    Make 8 wells and crack an egg into each. Season well and scatter over the grated cheddar.

    Bake for 12–15 minutes until the whites are set and yolks are still slightly runny. Serve straight from the skillet.
