Sausage and Butter Bean Casserole
Ingredients
- 8 good-quality pork sausages
- 400 g tinned butter beans, drained
- 400 g tinned chopped tomatoes
- 1 onion
- 1 red pepper
- 2 garlic cloves
- 2 tsp smoked paprika
- 200 ml chicken stock
- 1 tbsp olive oil
- 15 g fresh flat-leaf parsley

Method

Heat the oil in a large, deep frying pan or casserole over a medium-high heat. Brown the sausages all over for 6–8 minutes, then remove and slice into thirds.

Add the diced onion and pepper to the pan and soften for 5 minutes. Add the garlic and smoked paprika and cook for 1 minute more.

Pour in the tomatoes and stock, stir well, and bring to a simmer.

Return the sausage pieces to the pan along with the butter beans.

Simmer uncovered for 15 minutes until the sauce has thickened and the flavours have melded together.

Scatter over the chopped parsley and serve with crusty bread or jacket potatoes.
