Salt Cod Fritters with Honey, Sesame and Lemon Dip

Ingredients

  • 500 g salt cod, soaked overnight and drained
  • 400 g floury potatoes
  • 4 spring onions
  • 1 egg
  • 80 g plain flour
  • 2 tbsp runny honey
  • 2 tbsp tahini
  • 100 ml olive oil

Method

    Boil the potatoes until tender, drain, and mash. Simmer the soaked salt cod in fresh water for 10 minutes, then drain and flake, checking for bones.

    Finely slice the spring onions. Combine the cod, mashed potato, spring onions, and beaten egg. Season with pepper — the cod will already be salty. Shape into 12 small patties.

    Dust the patties in flour, shaking off the excess.

    Heat the olive oil in a large frying pan over a medium-high heat and fry the fritters in batches for 3 minutes per side until golden and crisp.

    Whisk together the tahini, honey, lemon juice, and a splash of water to make a dipping sauce. Serve the warm fritters alongside.
