Roasted Sweet Potato & Black Bean Salad with Lime Dressing

  • 800 g sweet potatoes
  • 400 g tinned black beans
  • 2 lime
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 3 tbsp olive oil
  • 20 g fresh coriander
  • 1 red onion
  • 1 avocado

Method

    Preheat the oven to 200°C. Peel and cube the sweet potatoes. Toss with 2 tbsp olive oil, cumin and smoked paprika. Spread on a baking tray and roast for 30–35 minutes until caramelised.

    Finely slice the red onion and soak in the juice of one lime for 10 minutes to quick-pickle.

    Drain and rinse the black beans, then warm in a small pan with a pinch of cumin and salt.

    Whisk together remaining olive oil, juice of the second lime and a pinch of salt for the dressing.

    Arrange the warm sweet potato and black beans on a platter. Top with sliced avocado, pickled red onion and coriander. Drizzle with dressing.
