Method

  1. 1

Soak the cashew nuts in 30ml hot water for 15 minutes, then blend to a smooth paste.

  2. 2

Blitz the chicken thigh fillets in a food processor with the cashew paste, double cream, egg, garlic and ginger until smooth and almost mousse-like.

  3. 3

Mix in the garam masala and white pepper, then mould the mixture around skewers into long sausage shapes.

  4. 4

Brush with the vegetable oil and grill under a hot oven grill, or on a griddle, for 12-14 minutes, turning, until lightly charred and cooked through with no pink remaining.

  5. 5

Serve with lime wedges and a salad.
