Method
- 1
Cut the beef brisket into 4cm chunks. Blend the shallots, garlic, galangal, dried red chillies and ground turmeric to a smooth paste.
- 2
Toast the desiccated coconut in a dry pan over a medium heat for 3-4 minutes, stirring, until deep golden brown, then set aside.
- 3
Fry the paste in a large heavy pan for 10 minutes until darkened and the oil has separated out.
- 4
Add the beef, lemongrass and kaffir lime leaves and stir to coat, then pour in the coconut milk.
- 5
Simmer uncovered on a low heat for 75-80 minutes, stirring every 10 minutes, until most of the liquid has gone and the sauce is thick.
- 6
Stir in the toasted coconut and cook for a final 10 minutes, stirring often, until the rendang is dark brown and dry, with no pink in the beef.
- 7
Rest for 5 minutes before serving with steamed rice.
