Method

  1. 1

Rub 1 tbsp of the ghee into the gram flour with a pinch of the ground turmeric and a little water until you have a firm dough, then roll into four long logs.

  2. 2

Simmer the logs in a pan of water for 15 minutes until firm, then lift out, cool slightly and slice into rounds, reserving the cooking water.

  3. 3

Heat the remaining ghee in a pan and fry the cumin seeds for 30 seconds, then add the garlic and cook for 1 minute.

  4. 4

Stir in the remaining turmeric and the chilli powder, then whisk in the natural yoghurt and 200ml of the reserved cooking water.

  5. 5

Bring to a gentle simmer, stirring constantly, and cook for 8 minutes until thickened, then add the sliced gatte and simmer for a further 5 minutes.

  6. 6

Scatter with the chopped coriander and serve with rice.
