Method

  1. 1

Boil the potatoes for 15 minutes until tender, then drain and mash well.

  2. 2

Mix the mashed potato with the finely chopped green chillies, chopped coriander, ground cumin and amchur, and season to taste.

  3. 3

Knead 300g of the chapati flour with warm water to a soft dough, then divide into 8 balls.

  4. 4

Roll each ball out, place a spoonful of the potato filling in the centre, fold the edges over to seal, and roll out again, dusting with the remaining flour as needed.

  5. 5

Heat a dry griddle over medium heat and cook each paratha for 2-3 minutes on each side, brushing with ghee, until golden and cooked through.

  6. 6

Serve the hot parathas with the natural yoghurt and mango chutney.
