Pulled Jackfruit BBQ Burgers

Ingredients

  • 560 g tinned young green jackfruit in brine
  • 6 tbsp BBQ sauce
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 250 g white cabbage
  • 3 tbsp vegan mayonnaise
  • 4 brioche-style vegan buns
  • 1 tbsp sunflower oil

Method

    Drain and rinse the jackfruit. Pat dry and use your hands or two forks to shred it into fibrous strips.

    Heat the oil in a large frying pan over medium heat. Add the jackfruit, smoked paprika and garlic powder. Cook for 8 minutes, stirring frequently, until it begins to caramelise.

    Pour over the BBQ sauce, stir well and cook for a further 5 minutes until sticky and glossy.

    Finely shred the cabbage and mix with the vegan mayo and a pinch of salt to make a quick coleslaw.

    Toast the buns. Pile the pulled jackfruit onto the base, top with coleslaw, add the lid and serve immediately.
