Ingredients

  • 100 g walnuts
  • 400 g tinned kidney beans
  • 400 g tinned black beans
  • 800 g tinned chopped tomatoes
  • 30 g dark chocolate
  • 1 onion
  • 4 garlic cloves
  • 2 tbsp chipotle paste
  • 2 tsp ground cumin
  • 2 tbsp vegetable oil

Method

    Blitz the walnuts in a food processor until they resemble coarse mince.

    Heat the oil in a large pan. Fry the diced onion for 5 minutes, then add crushed garlic and cook for 2 minutes.

    Add the blitzed walnuts and fry for 4 minutes until lightly toasted.

    Stir in the cumin and chipotle paste, then add the chopped tomatoes and both tins of drained beans.

    Bring to the boil, then reduce heat and simmer for 25 minutes until rich and thick.

    Stir in the dark chocolate until melted. Season and serve with rice, soured cream and sliced avocado.
