  • 400 g raw king prawns, peeled
  • 8 small flour tortillas
  • 2 ripe avocados
  • 1 lime
  • 1 tsp mild smoked paprika
  • 1 garlic clove
  • 2 tbsp olive oil
  • 100 g iceberg lettuce, shredded

Method

    Toss the prawns with the smoked paprika, a crushed garlic clove, 1 tbsp of olive oil and a pinch of salt.

    Mash the avocados in a bowl with the juice of the lime and a pinch of salt to make a simple guacamole.

    Heat the remaining olive oil in a frying pan over a high heat. Add the prawns in a single layer and cook for 1–2 minutes per side until pink and cooked through. Do not overcook.

    Warm the tortillas in a dry pan for 30 seconds each side.

    Spread a spoonful of guacamole on each tortilla, add a few prawns and top with shredded lettuce. Serve immediately.
