Ingredients

  • 600 g pork shoulder steaks
  • 2 garlic cloves
  • 2 egg yolks
  • 1 tbsp lemon juice
  • 150 ml olive oil

Method

  1. 1

Blitz the garlic, egg yolks and lemon juice in a small food processor, then with the motor running add the olive oil in a thin, steady stream until the alioli is thick and glossy. Season well.

  2. 2

Season the pork steaks. Heat a griddle pan or large frying pan until hot and cook the pork for 4-5 minutes on each side until cooked through with no pink remaining.

  3. 3

Rest the pork for 3 minutes.

  4. 4

Slice thickly and serve with the garlic alioli spooned over or alongside.
