Method
- 1
Bash the pork loin steaks to an even thickness and season.
- 2
Lay a rasher of bacon and 2-3 prunes along one edge of each steak, then roll up tightly and secure with cocktail sticks.
- 3
Heat the vegetable oil in a flameproof casserole and brown the rouladen on all sides, about 6 minutes, then remove.
- 4
Fry the sliced onion in the same pot for 3-4 minutes until softened, then pour in the chicken stock and stir in the redcurrant jelly.
- 5
Return the rouladen to the pot, cover and simmer gently for 35-40 minutes until the pork is cooked through with no pink remaining.
- 6
Remove the cocktail sticks and serve the rouladen with the sauce spooned over.
