Pork Mince Larb-Style Salad with Chilli and Lime

- 500 g pork mince
- 2 limes
- 1 red chilli
- 4 spring onions
- 2 tbsp fish sauce
- 1 iceberg lettuce
- 20 g fresh mint
- 1 tbsp vegetable oil

Method

Heat the oil in a frying pan over high heat. Add the pork mince and stir-fry for 6–8 minutes until cooked through and slightly caramelised.

Remove from the heat. Squeeze over the lime juice, add the fish sauce and mix well.

Thinly slice the chilli and spring onions. Pick the mint leaves.

Toss the chilli, spring onions and mint through the warm pork.

Shred the lettuce onto plates and spoon the pork salad on top. Serve immediately with steamed rice.
