Pork Meatball and Roasted Tomato Bake

Ingredients

  • 500 g pork mince
  • 500 g cherry tomatoes
  • 400 g tinned chopped tomatoes
  • 3 clove garlic cloves
  • 1 egg
  • 2 tsp dried mixed herbs
  • 30 g ground rice or rice breadcrumbs
  • 2 tbsp olive oil

Method

    Preheat the oven to 200°C (fan 180°C). Combine the pork mince, egg, ground rice, 1 tsp mixed herbs, and seasoning. Roll into 20 small meatballs.

    Heat the olive oil in a large ovenproof frying pan. Brown the meatballs all over for 4–5 minutes, then remove.

    In the same pan, fry the crushed garlic for 30 seconds. Add the tinned tomatoes, cherry tomatoes, remaining mixed herbs, salt and pepper. Stir to combine.

    Nestle the meatballs into the sauce. Transfer to the oven and bake for 20 minutes until the meatballs are cooked through and the cherry tomatoes have burst.

    Serve with gluten-free pasta or mashed potato.
