  • 8 pork sausages
  • 800 g cannellini beans
  • 400 g chopped tomatoes
  • 3 fresh rosemary
  • 4 garlic cloves
  • 1 onion
  • 150 ml dry white wine
  • 2 tbsp olive oil

Method

    Heat the olive oil in a heavy casserole dish over a medium heat. Brown the sausages all over for 6–8 minutes, then remove and set aside.

    Finely chop the onion and crush the garlic. Cook in the same pan for 5 minutes until softened, scraping up any sausage bits.

    Pour in the white wine and let it bubble for 2 minutes, then add the chopped tomatoes and rosemary sprigs.

    Drain and rinse the cannellini beans and add them to the pan along with the browned sausages. Season generously.

    Cover and simmer on a low heat for 25 minutes. Remove the rosemary, slice the sausages and stir through before serving.
