Method
- 1
Heat the oven to 240C (220C fan, gas 9), or as hot as it will go, with a large baking tray inside to heat up.
- 2
Roll or stretch the pizza dough out on a sheet of baking paper to roughly fit the hot tray.
- 3
Mix the passata with the crushed garlic and spread over the dough, leaving a border around the edge.
- 4
Carefully slide the pizza, still on its paper, onto the hot tray and bake for 10-12 minutes until the base is crisp and golden at the edges.
- 5
Scatter over the torn mozzarella and most of the basil, and bake for a further 3-4 minutes until the cheese is melted and bubbling.
- 6
Drizzle with olive oil and scatter with the remaining basil to serve.
