Pea & Mint Fritter Flatbreads with Feta

Ingredients

  • 400 g frozen peas
  • 120 g self-raising flour
  • 2 eggs
  • 15 g fresh mint
  • 100 g feta cheese
  • 4 flatbreads
  • 1 lemon
  • 3 tbsp sunflower oil

Method

    Cook the peas in boiling water for 2 minutes, drain and roughly crush with a fork. Finely chop the mint.

    Combine the crushed peas, flour, eggs, mint and a generous pinch of salt. Stir until a thick batter forms.

    Heat the oil in a large frying pan over medium heat. Drop large spoonfuls of the batter in and flatten gently. Cook for 3 minutes per side until golden. Make 8 fritters in total.

    Warm the flatbreads in a dry pan.

    Place two fritters on each flatbread, crumble over the feta, squeeze over lemon juice and season with black pepper. Fold and serve.
