Ingredients

  • 400 g beef mince
  • 1 onion, finely chopped
  • 2 garlic cloves
  • 1 ripe tomatoes
  • 40 g pitted green olives
  • 20 wonton wrappers
  • 500 ml vegetable oil for frying
  • 1 tbsp fresh flat-leaf parsley, chopped

Method

  1. 1

Cook the onion and garlic in a dry frying pan for 4 minutes, then add the beef mince and cook for 8 minutes, breaking it up, until no pink remains.

  2. 2

Stir in the tomato and chopped green olives and cook for 3 minutes, until most of the liquid has cooked off. Stir in the parsley and leave to cool.

  3. 3

Lay out the wonton wrappers, spoon a little beef filling onto one half of each, fold over and press the edges firmly to seal.

  4. 4

Heat the vegetable oil in a deep pan to 180C and fry the pastries in batches for 2-3 minutes, until crisp and golden.

  5. 5

Drain on kitchen paper before serving.
