Ingredients

  • 900 g maris piper potatoes, peeled and cubed
  • 400 g beef mince
  • 1 onion, finely chopped
  • 2 garlic cloves
  • 40 g pitted green olives
  • 30 g raisins
  • 3 large eggs
  • 80 g plain flour
  • 500 ml vegetable oil for frying

Method

  1. 1

Boil the potatoes in salted water for 15-18 minutes until completely soft, then drain and mash. Leave to cool.

  2. 2

Cook the onion and garlic in a dry pan for 4 minutes, then add the beef mince and cook for 8 minutes, breaking it up, until no pink remains.

  3. 3

Boil 1 egg for 8 minutes, then cool, peel and chop. Stir the chopped egg, green olives and raisins into the beef and leave to cool.

  4. 4

Shape the mashed potato into 8 balls, flatten each in your palm, add a spoonful of filling and fold the potato around it to seal.

  5. 5

Dust each ball in the plain flour, then dip in the remaining beaten eggs.

  6. 6

Heat the vegetable oil in a deep pan to 180C and fry the croquettes in batches for 4-5 minutes, until deep golden and hot through.

  7. 7

Drain on kitchen paper before serving.
