Paneer Tikka Flatbreads with Mint Raita

Ingredients

  • 400 g paneer
  • 4 tbsp tikka paste
  • 200 ml natural yoghurt
  • 4 naan breads
  • 15 g fresh mint
  • 1 cucumber
  • 1 red onion
  • 1 tbsp sunflower oil

Method

    Cut the paneer into 3cm cubes. Mix the tikka paste with 4 tbsp yoghurt and toss the paneer cubes through the marinade. Leave for 10 minutes.

    Finely chop the mint and grate half the cucumber. Squeeze out excess water from the cucumber, then stir into the remaining yoghurt with the mint and a pinch of salt to make the raita.

    Thinly slice the red onion and remaining cucumber.

    Heat a griddle pan over high heat with the oil. Cook the paneer cubes for 2-3 minutes per side until charred and heated through.

    Warm the naan breads under the grill. Spread raita over each naan, scatter with red onion and cucumber slices, then top with the tikka paneer and serve immediately.
