Pan-Fried Pork Chops with Apple and Sage Sauce
Ingredients
- 4 bone-in pork chops
- 2 eating apples
- 150 ml gluten-free chicken stock
- 100 ml double cream
- 10 fresh sage leaves
- 30 g butter
- 1 onion
- 1 tbsp gluten-free wholegrain mustard
Method

Season the pork chops with salt and pepper. Heat a large frying pan over high heat with a little oil.

Fry the chops for 3–4 minutes each side until golden and cooked through. Remove and rest.

Reduce heat to medium. Melt the butter in the same pan and fry the sage leaves for 30 seconds until crispy. Remove and set aside.

Fry the finely sliced onion for 4 minutes, then add the peeled and sliced apples. Cook for 2 minutes.

Pour in the stock and simmer for 3 minutes. Stir in the cream and wholegrain mustard. Simmer until slightly thickened.

Return the chops to the pan to warm through. Serve topped with the crispy sage leaves.
