Pad Thai with King Prawns

Ingredients

  • 250 g flat rice noodles
  • 400 g raw king prawns
  • 3 eggs
  • 150 g beansprouts
  • 4 spring onions
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • 60 g roasted peanuts
  • 2 tbsp vegetable oil
  • 2 lime
  • 1 tsp dried chilli flakes

Method

    Soak the rice noodles in cold water for 20 minutes, then drain and set aside.

    Mix together the tamarind paste, fish sauce and palm sugar in a small bowl to make the sauce.

    Heat the oil in a large wok over a high heat. Add the prawns and stir-fry for 2 minutes until pink, then push to one side.

    Crack in the eggs and scramble lightly, then stir through the prawns.

    Add the drained noodles and pour over the sauce. Toss everything together for 2 minutes until the noodles are coated.

    Add the beansprouts and sliced spring onions, toss for 1 minute, then divide between bowls.

    Serve topped with crushed peanuts, dried chilli flakes and lime wedges.
