One-Pan Chicken, Chorizo & Orzo
Ingredients
- 500 g chicken thigh fillets
- 150 g cooking chorizo
- 300 g orzo pasta
- 800 ml chicken stock
- 400 g tinned chopped tomatoes
- 1 tsp smoked paprika
- 1 red pepper
- 1 tbsp olive oil
Method

Slice the chorizo and dice the red pepper. Cut the chicken thighs into large chunks.

Heat oil in a wide, deep-sided pan over a medium-high heat. Brown the chicken for 3–4 minutes, then remove.

Add the chorizo to the pan and fry for 2 minutes until it releases its oils. Add the red pepper and paprika and stir for 1 minute.

Return the chicken to the pan. Stir in the orzo, chopped tomatoes and stock.

Bring to the boil, then reduce heat and simmer for 12–15 minutes, stirring occasionally, until the orzo is cooked and the sauce has thickened. Season and serve straight from the pan.
