Ingredients

  • 320 g jasmine rice
  • 250 ml tinned coconut milk
  • 600 g chicken thigh fillets
  • 4 shallots
  • 3 garlic cloves
  • 2 bay leaves
  • 1 cucumber
  • 500 ml vegetable oil for frying

Method

  1. 1

Rinse the rice and cook with the coconut milk, 300ml water and bay leaves: bring to the boil, cover and simmer on the lowest heat for 12 minutes, then rest for 10 minutes.

  2. 2

Crush the garlic and blend with the shallots to a paste and rub over the chicken.

  3. 3

Heat 3cm of vegetable oil in a wok to 180C and fry the chicken for 10-12 minutes, turning, until golden and cooked through with no pink remaining.

  4. 4

Drain on paper towel and slice the cucumber.

  5. 5

Serve the coconut rice with the fried chicken and cucumber slices.
