Ingredients

  • 600 g lamb mince
  • 5 egg
  • 2 onion, finely chopped
  • 5 garlic cloves
  • 15 g fresh ginger, grated
  • 1.5 tsp garam masala
  • 300 g tomatoes, finely chopped
  • 1 tsp chilli powder
  • 400 ml vegetable oil for frying
  • 10 g fresh coriander, chopped

Method

  1. 1

Boil 4 of the eggs for 9 minutes, cool and peel.

  2. 2

Mix the lamb mince with half the onion, half the garlic and ginger, 1 tsp of the garam masala and the remaining egg, and knead well.

  3. 3

Divide the mince into 4 portions and mould each one around a boiled egg to enclose it completely.

  4. 4

Heat the vegetable oil in a deep pan to 180C and fry the koftas for 6-7 minutes, turning, until browned all over and cooked through with no pink remaining, then drain and halve each one lengthways.

  5. 5

Heat 2 tbsp of the frying oil in a separate pan and cook the remaining onion over medium heat for 8 minutes until golden, then add the remaining garlic and ginger and cook for 1 minute.

  6. 6

Stir in the chilli powder and remaining garam masala, then add the chopped tomatoes and cook for 8 minutes until thickened.

  7. 7

Spoon the sauce over the halved koftas, scatter with the chopped coriander and serve with rice.
