Ingredients

  • 300 g chestnut mushrooms, finely chopped
  • 50 g unsalted butter
  • 80 g plain flour
  • 400 ml whole milk
  • 100 g mature cheddar, grated
  • 2 egg, beaten
  • 150 g breadcrumbs
  • 500 ml vegetable oil for frying

Method

  1. 1

Melt the butter in a pan and fry the mushrooms for 6-7 minutes until golden and any liquid has evaporated.

  2. 2

Stir in the flour and cook for a minute, then gradually whisk in the milk to make a thick, smooth sauce.

  3. 3

Remove from the heat, stir in the cheddar and season well. Spread onto a tray and chill for at least 1 hour until firm.

  4. 4

Shape the mixture into 12 small croquettes, dip each in beaten egg then coat in breadcrumbs.

  5. 5

Heat the oil in a deep pan to 180C and fry the croquettes in batches for 3-4 minutes until deep golden and hot through.

  6. 6

Drain on kitchen paper and serve hot.
