Ingredients

  • 600 g skinless chicken breasts
  • 80 g plain flour
  • 2 large eggs
  • 150 g panko breadcrumbs
  • 300 g tomato passata
  • 100 g cooked ham slices
  • 150 g mozzarella, grated
  • 1 tsp dried oregano
  • 500 ml vegetable oil for frying

Method

  1. 1

Heat the oven to 200C (180C fan, gas 6). Slice each chicken breast horizontally into two thin fillets and flatten slightly.

  2. 2

Dust the chicken in the plain flour, dip in the beaten eggs, then coat well in the panko breadcrumbs.

  3. 3

Heat the vegetable oil in a large frying pan and fry the chicken for 3-4 minutes each side, until golden and cooked through with no pink remaining. Drain on kitchen paper.

  4. 4

Lay the fried chicken in a single layer in an ovenproof dish, spoon over the tomato passata and scatter with the dried oregano.

  5. 5

Top with the ham and mozzarella and bake for 12-15 minutes, until the cheese is melted and bubbling.
