Maple-Glazed Halloumi with Squash and Sage

Ingredients

  • 250 g halloumi
  • 1 butternut squash
  • 3 tbsp maple syrup
  • 3 tbsp olive oil
  • 15 g fresh sage leaves
  • 2 red onion
  • 50 g walnuts
  • 1 tsp ground cinnamon

Method

    Preheat the oven to 200°C (180°C fan). Peel and cube the butternut squash, and cut the red onions into wedges.

    Toss the squash and onion with olive oil, cinnamon and half the maple syrup. Spread on a large tray and roast for 25 minutes.

    Toss the walnuts and sage leaves into the tray. Lay the sliced halloumi on top and drizzle with the remaining maple syrup.

    Return to the oven for 12–15 minutes until the halloumi is golden and the squash is caramelised.

    Serve immediately, spooning the tray juices over the top.
