  • 400 ml vegetable oil for frying

Method

  1. 1

Steam or poach the tilapia for 8 minutes until cooked through, then cool and flake into small pieces, discarding any bones.

Mix the fish, mashed potato, onion, green chillies, ginger, turmeric and coriander, and season well.

  4. 4

Shape into 8 oval cutlets, dip each in the beaten egg and coat in the breadcrumbs.

  5. 5

Heat the vegetable oil in a deep pan to 180C and fry the cutlets in batches for 4-5 minutes until golden and crisp.

  6. 6

Drain on kitchen paper and serve hot with a salad.
