Estimated from typical values for each ingredient — a guide, not a substitute for the label on what you actually buy.

Method

  1. 1

Shape the beef mince into 4 patties and season.

  2. 2

Fry the patties in a little oil for 4-5 minutes on each side until no pink remains, then lift out.

  3. 3

Add the onion to the pan and cook for 5 minutes, then stir in the plain flour and cook for 1 minute. Gradually whisk in the beef stock and worcestershire sauce, and simmer for 3-4 minutes until thickened into a gravy.

  4. 4

Melt the butter in another pan and fry the eggs until the whites are set but the yolks still soft.

  5. 5

    Cook the rice.

  6. 6

Serve each portion as rice topped with a beef patty, a fried egg and the gravy, scattered with the spring onions.
