Loaded Nacho Bake with Beef and Cheese Sauce

Ingredients

  • 200 g plain tortilla chips
  • 400 g beef mince
  • 2 tbsp mild taco seasoning
  • 200 g tinned chopped tomatoes
  • 200 g mild cheddar cheese, grated
  • 100 ml soured cream
  • 100 g tinned sweetcorn, drained
  • 1 tbsp sunflower oil

Method

    Preheat the oven to 190°C (170°C fan). Heat the oil in a frying pan over a medium-high heat, add the beef mince and cook for 8 minutes until browned, breaking it up as it cooks.

    Stir in the taco seasoning and tinned tomatoes. Simmer for 5 minutes until the sauce thickens slightly. Stir through the sweetcorn.

    Spread the tortilla chips in an even layer in a large ovenproof dish. Spoon the beef mixture evenly over the top.

    Scatter the grated cheddar generously over everything. Bake in the oven for 12–15 minutes until the cheese is melted, bubbling and golden.

    Remove from the oven and drizzle with soured cream. Serve immediately straight from the dish.
