Lemon Butter Cod with Pea Mash

Ingredients

  • 4 cod fillets
  • 400 g frozen peas
  • 60 g unsalted butter
  • 1 lemon
  • 2 clove garlic cloves
  • 15 g fresh mint
  • 1 tbsp olive oil

Method

    Cook the frozen peas in boiling salted water for 3 minutes, then drain and return to the pan.

    Add half the butter and the fresh mint to the peas, then use a potato masher to crush to a rough mash. Season well and keep warm.

    Pat the cod fillets dry and season both sides with salt and pepper.

    Heat the olive oil in a non-stick frying pan over a high heat. Add the cod skin-side down and press gently. Cook for 4 minutes until the skin is crisp.

    Flip the cod, add the remaining butter and crushed garlic to the pan and cook for 2 minutes, basting the fish with the butter.

    Squeeze the lemon juice over the fish and serve on top of the pea mash, spooning over the pan juices.
