Method
- 1
If bottle gourd isn't available, courgette works well in its place. Grate the bottle gourd, squeeze out as much liquid as possible, then mix with the gram flour to a firm dough and shape into 12 small balls.
- 2
Heat 2 tbsp of the vegetable oil in a frying pan and fry the balls for 6-8 minutes, turning, until golden and firm. Set aside.
- 3
Cook the basmati rice in plenty of boiling water for 10-12 minutes, then drain.
- 4
Heat the remaining oil in a pan and fry the onion for 6 minutes until softened, then add the garlic cloves and fresh ginger and fry for 1 minute.
- 5
Stir in the chopped tomatoes, ground turmeric and chilli powder and simmer for 12 minutes until thickened.
- 6
Add the koftas to the gravy and simmer for 5 minutes to warm through without breaking them up.
- 7
Serve with the rice.
