Lamb Mince Moussaka-Inspired Bake

  • 500 g lamb mince
  • 2 aubergines
  • 400 g tinned chopped tomatoes
  • 1 onion
  • 1 tsp ground cinnamon
  • 200 ml crème fraîche
  • 1 egg
  • 3 tbsp olive oil

Method

    Preheat the oven to 200°C/180°C fan. Slice the aubergines into 1cm rounds, brush with olive oil, lay on a baking tray and roast for 20 minutes until golden.

    Meanwhile, finely dice the onion and fry in a little olive oil for 5 minutes. Add the lamb mince and brown well.

    Stir in the cinnamon, chopped tomatoes and seasoning. Simmer for 15 minutes.

    Beat the crème fraîche with the egg and season well.

    Layer the aubergine slices in an ovenproof dish, top with the lamb mince, then pour over the crème fraîche mixture. Bake for 25 minutes until golden and bubbling.
