Lamb Kofta Flatbreads with Tzatziki

Ingredients

  • 500 g lamb mince
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 clove garlic cloves
  • 4 flatbreads
  • 200 g tzatziki
  • 1 baby gem lettuce
  • 150 g cherry tomatoes

Method

    Crush the garlic and mix into the lamb mince with the cumin, coriander and a good pinch of salt.

    Shape the mixture into 12 small oval koftas.

    Heat a griddle or frying pan over a high heat. Cook the koftas for 3-4 minutes per side until cooked through and nicely charred.

    Meanwhile, warm the flatbreads in a dry pan for 1 minute each side.

    Halve the cherry tomatoes and separate the lettuce leaves.

    Spread tzatziki over each flatbread, pile on the lettuce, tomatoes and koftas, then roll or fold to serve.
