Lamb Kofta Flatbreads with Cucumber Yoghurt

Ingredients

  • 500 g lamb mince
  • 4 flatbreads
  • 200 ml natural yoghurt
  • 1 cucumber
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 clove garlic cloves
  • 1 tbsp vegetable oil

Method

    Mix the lamb mince with the cumin, ground coriander, one crushed garlic clove and plenty of seasoning. Divide into 12 equal portions and shape each into a small sausage.

    Heat the vegetable oil in a large frying pan over medium-high heat and cook the koftas for 10–12 minutes, turning regularly, until browned and cooked through.

    Meanwhile, coarsely grate the cucumber and squeeze out excess moisture in a clean tea towel. Mix with the yoghurt, remaining crushed garlic and a pinch of salt.

    Warm the flatbreads in a dry frying pan or under the grill for 1–2 minutes.

    Serve the koftas on the warm flatbreads with a generous spoonful of cucumber yoghurt.
