Korean Kimchi & Egg Burgers

Ingredients

  • 200 g kimchi
  • 4 eggs
  • 4 brioche burger buns
  • 2 tbsp gochujang paste
  • 3 tbsp mayonnaise
  • 20 g butter
  • 3 spring onions
  • 1 tbsp sesame seeds

Method

    Mix together the gochujang paste and mayonnaise until smooth. Finely slice the spring onions.

    Melt the butter in a large frying pan over medium heat. Crack in the eggs and fry to your liking (a slightly runny yolk works best here).

    Meanwhile, toast the brioche buns and warm the kimchi in a small pan for 2 minutes.

    Spread the gochujang mayo generously over both halves of each bun.

    Place a fried egg on each base, pile on warm kimchi and scatter over sliced spring onions and sesame seeds. Close the bun and serve immediately.
