Method

  1. 1

Mix the lamb mince and grated onion in a bowl and season well.

  2. 2

Lay out the wonton wrappers and place a small teaspoon of the lamb mixture in the centre of each; dampen the edges and fold into small parcels, pressing to seal.

  3. 3

Heat the olive oil in a large frying pan and fry the mantı in batches for 2-3 minutes each side until golden; add a splash of water, cover, and steam for 5 minutes until the filling is cooked through with no pink remaining.

  4. 4

Crush the garlic clove into the greek yoghurt and season.

  5. 5

Melt the butter with the sumac until foaming.

  6. 6

Spoon the garlic yoghurt over the pan-fried mantı and drizzle with the sumac butter to serve.
