Method

  1. 1

Put the beef mince, cooked rice, grated onion and flat-leaf parsley in a bowl with 1 of the eggs and the cheddar cheese, grated; season well and mix thoroughly with your hands until well combined.

  2. 2

Shape into 8 flat oval patties, about 2cm thick.

  3. 3

Beat the remaining egg in a shallow bowl and put the plain flour on a plate.

  4. 4

Dip each patty first in the flour, then in the beaten egg.

  5. 5

Heat the sunflower oil in a frying pan and fry the patties for 4-5 minutes each side until deep golden and cooked through with no pink remaining in the meat.

  6. 6

Drain briefly on paper towel before serving.
