Ingredients

  • 400 g white fish fillets (such as pollock)
  • 250 g raw tiger prawns, peeled
  • 200 g cleaned squid rings
  • 100 g cornflour
  • 1 red onion, finely sliced
  • 2 lime, juiced
  • 2 tbsp fresh coriander, chopped
  • 150 g mixed salad leaves
  • 500 ml vegetable oil for frying

Method

  1. 1

Cut the fish into bite-sized chunks. Pat the fish, prawns and squid dry.

  2. 2

Toss the seafood in the cornflour until lightly coated all over.

  3. 3

Heat the vegetable oil in a deep pan to 180C and fry the seafood in batches for 2-3 minutes, until golden and cooked through. Drain on kitchen paper.

  4. 4

Mix the red onion, lime juice and fresh coriander for a quick salsa.

  5. 5

Pile the fried seafood onto the mixed salad leaves and scatter with the onion salsa.
