  • 400 g cooked pulled pork
  • 80 ml barbecue sauce
  • 200 g coleslaw
  • 40 g butter
  • 1 tsp smoked paprika

Method

    Preheat the oven to 200°C. Prick, oil and season the potatoes and bake for 50–55 minutes.

    Warm the pulled pork in a pan over medium heat, stirring in the barbecue sauce and smoked paprika until piping hot and well coated.

    Split the potatoes, add a knob of butter, then pile on the sticky pulled pork.

    Top each potato with a generous spoonful of coleslaw and serve straight away.
