  • 300 g cooked king prawns
  • 3 tbsp mayonnaise
  • 1 tbsp tomato ketchup
  • 1 tbsp lemon juice
  • 1 tsp Tabasco sauce
  • 40 g rocket leaves
  • 40 g butter

Method

    Preheat the oven to 200°C. Prick, oil and salt the potatoes and bake for 50–55 minutes until fluffy inside.

    Whisk together the mayonnaise, ketchup, lemon juice and Tabasco to make the Marie Rose sauce. Season to taste.

    Fold the prawns through the sauce.

    Split the potatoes, add butter, then top with a handful of rocket and spoon over the prawn Marie Rose filling.
