Method

  1. 1

Simmer the fried tofu pouches with the soy sauce, mirin, caster sugar and 150ml water in a small pan for 10-12 minutes until glossy and most of the liquid has been absorbed. Leave to cool slightly.

  2. 2

Cook the sushi rice according to the pack, then stir through the rice vinegar while still warm and leave to cool to room temperature.

  3. 3

Carefully open each tofu pouch into a little pocket without tearing it.

  4. 4

Stir the toasted sesame seeds through the rice, then pack a spoonful into each tofu pouch, folding the edges over to close.

  5. 5

Arrange on a plate, cut-side up, to serve.
